White Claw Blackberry-Lime Scones

Ingredients

  • 2 cups all-purpose flour
  • 6 tbsp granulated sugar
  • 1 ½ tsp baking powder
  • ½ tsp Kosher salt
  • 6 tbsp unsalted butter (cubed & EXTRA cold)
  • cup buttermilk
  • ¼ cup lime-flavored White Claw (+ more as needed)
  • ¾ tsp vanilla extract
  • ¾ cup fresh blackberries (chopped)
  • zest of one small lime
  • splash of lime juice
  • pinch of white pepper
  • splash of heavy cream (totally optional)

Instructions

  • Preheat your oven to 400°F & line a baking sheet with parchment paper.
  • In a mixing bowl combine the flour, sugar, salt & baking powder. Mix well.
  • Cut the cold, cubed butter into the dry mix using a pastry blender.
  • In another bowl, whisk together the buttermilk, White Claw, vanilla extract & optional heavy cream.
  • Mix the wet ingredients into the dry. Then, add the blackberries, lime zest, lime juice & white pepper and gently fold it all in.
  • Don't overmix the dough! But if it's too dry, add some additional *hints* of White Claw.
  • Place the dough onto a lightly floured surface & roll it into a circle (1 to 1½ inches thick). Cut into 8 triangles & place each onto the baking sheet.
  • Bake the scones for 16 to 18 minutes, until golden brown.
  • Remove the scones & let them rest for a few minutes until completely cooled.
