Well spring has officially SPRUNG! And despite the years of practice, losing that hour of sleep never gets any easier.
*sigh*
But in honor of the occasion, we thought we’d put the all-black on the back burner & take a moment to embrace some big pastel energy. Specifically, in the form of decorative confectionary bliss: SPRINKLES.
Despite loving to bake, I’m honestly not the biggest sweets person. However, brownies are always the exception – & this is hands DOWN my new go-to recipe.
Dense yet soft & packed with fudgy flavor, these little guys come together in a way that could not be any simpler. Hence why it’s a great one to have in your baking back pocket for any time you’re in a pinch for time…or just suddenly crave brownies at 2AM & want to avoid a *total* kitchen tornado.
Not that we know anything about that…
// INGREDIENTS //
+ 3 large eggs
+ 1 c granulated sugar
+ 1 c brown sugar (broken up with a fork)
+ 2 sticks unsalted butter (melted)
+ 1 T vanilla extract
+ 1/2 c flour
+ 1 c unsweetened cocoa powder
+ 1/2 t kosher salt
+ 4 oz semi-sweet chocolate chips (or a 2 oz chopped up chocolate bar)
+ Pastel & skull-shaped sprinkles
// WHAT TO DO //
++ Preheat the oven to 300ºF & grease an 8 x 8 dish with non-stick spray or butter.
++ In a large mixing bowl, add the eggs & beat until light & fluffy.
++ In a separate bowl, whisk together the melted butter, granulated sugar & brown sugar. Add the butter/sugar mix to the eggs & stir. Then, add in the rest of the ingredients – minus the chocolate chips.
++ Mix until the batter is combined, being super careful not to OVER-mix.
++ Carefully fold in the chocolate chips & pour the batter into the pan.
++ Top with a few jimmy sprinkles & bake for 40 to 50 minutes.
++ Double-check the “doneness” using the toothpick test, depending on how gooey you like them.
++ Remove them from the oven & place on a hot pad to cool. Immediately top with more sprinkles, gently pressing them into the top of the brownies to fully stick, & let ~fully~ cool before slicing.

THE BEST, FUDGY, PASTEL GOTH BROWNIES
Ingredients
- 3 large eggs
- 1 cup granulated sugar
- 1 cup brown sugar
- 2 sticks unsalted butter (melted)
- ½ cup all-purpose flour
- 1 cup unsweetened cocoa powder
- ½ tsp kosher salt
- 4 oz semi-sweet chocolate chips
- pastel & skull-shaped sprinkles
Instructions
- Preheat the oven to 300°F & grease an 8×8 dish with non-stick spray or butter.
- In a large mixing bowl, add the eggs & beat until light & fluffy.
- In a separate bowl, whisk together the melted butter & both sugars. Add the butter/sugar mix to the eggs & stir. Then, add in the rest of the ingredients (minus the chocolate chips).
- Mix until the batter is combined (without OVER-mixing).
- Fold in the chocolate chips & pour the batter into the pan. Top with a few jimmy sprinkles.
- Bake for 40 to 50 minutes, using the toothpick test to check when they're done.
- Remove them from the oven & place on a hot pad to cool. Immediately top with more sprinkles, pressing them into the brownie tops to stick, & let fully cool before slicing.
