Coming from Texas, we consider breakfast tacos their own food group. And here in quarantine…that’s getting truer by the day.
Since life at large currently feels like an endless string of Saturdays in a Black Mirror universe, calendars have officially gone out the window & all we have are egg cartons to help tell time.
Well, maybe not on a national level just yet. But in our household, for sure! All thanks to this breakfast-for-dinner staple that needs no introduction.
I mean really, they’re so easy. So quick. So cheap. So filling. And most importantly – DELISH. Though as with any *true* art form, there are methods to the madness that can easily help take your “egg-spertise” up a notch.
Already semi-regretting that pun?
SECRET #1: EMBRACE THE KITCHEN SINK (& RELISH IN MINIMAL CLEAN UP)
First & foremost, I think we can all agree that for as much fun as cooking is, the cleaning – NOT so much. So one of the most beautiful things about our beloved breakfast tacos is the fact that 1) you don’t need that many pans, & 2) it’s a GREAT opportunity to clear out the fridge.
After all, we’re talking tacos. Where every flavor ultimately gets piled on top of one another. So even though your ingredients may need to be cooked one at a time, why not go ahead & just use the same pan for it all?
Plus, these always merit a true kitchen sink kinda vibe. Whatever leftover veggies, meat, grains, toppings you have on hand, go ahead & throw ‘em all in! It’s going to be delicious any which way.
SECRET #2: CRISPY FROZEN HASH BROWNS
Who doesn’t love a crispy little spud, am I right? But with that said, I think we’ve all experienced that fatal expectation-vs-reality moment of trying to whip up those frozen hash browns, only to be thoroughly disappointed they aren’t reminiscent of your fave diner down the street. Alas, there is hope yet!
A lot of frozen potato instructions say to cook them up in a flavorless oil, like canola or veggie. Which is understandable, since they have notoriously higher smoke points; however, the true secret is…OLIVE OIL!
For whatever reason the difference it makes is legit night & day. So just make the swap & follow the rest of the package instructions as normal.
SECRET #3: SPLATTER-FREE BACON
Unpopular opinion: I can almost always do without the bacon. But if you ~are~ all about it, yet still detest the scary splatters, cooking bacon in the oven is another hot tip totally worth trying.
All you have to do is line a baking sheet with aluminum foil, set an oven-safe wire rack on top, lay out your strips of bacon & pop it in an oven pre-heated to 400 degrees. Patiently wait about 18 to 20 minutes (or to whatever extent of doneness you like) & feast your eyes on the perfectly cooked (sans mess) glory.
SECRET #4: YOU CAN DO YOU
IMO another fantastic thing about breakfast tacos is that you can truly make them your own. I.e. however indulgent or healthy you’d like!
Whether it’s a bacon, egg & cheese on flour kind of day, or you’re keeping the fitness faith with a spinach, mushroom & egg white on corn combo, you can customize these little guys to any & everything you’re feeling.
Which, as we all know, has a way of fluctuating by the day. So, hey, it works!
